Faking It Recipes

Healthy foods that taste delicious!

What is healthy? I like to eat natural, locally grown foods. I beleive they are good for our environment and I believe they contain more anti oxidants and phyto neutrients that are good for our bodies. I minimize consuming processed food products. And I focus on bringing fiber into my body - from foods, not additives.

Why fiber? Many American diets are sorely lacking in fiber. Eating our carbs with fiber helps our bodies process the carbs out. Unprocessed carbs can become fat on our bodies, and according to Dr. Lustig, there is no way we can ever exercise our carbs off. In order to make up for one big mac, we would have to run for eight hours straight. Our bodies have to process them off, but our liver can't do it alone. So we help it out by bringing fiber back into our diets. Women require 21-25 grams of fiber daily and men 30-38. 

For a longer lasting calming effect from the carbohydrates you eat, eat (fiber-rich) complex carbohydrates such as air-popped popcorn or whole grain pasta. Refined grains, like white rice and pasta, have lost 90% of their nutritional value through the refining process. As if that weren't reason enough to choose whole grains like brown rice, quinoa and whole oats, a recent study showed that a diet rich in whole grains actually flattens your belly by reducing fat storage in your lower abdominal region.

Fiber also aids in managing cholesterol. 

Huevos Rancheros


Super easy to make! Just all stacked together:

- Street Taco Tortillas, steamed                             

- Black Beans, warmed

- Eggs, scrambled

- Your Favorite Refrigerated Salsa, reduced  

(which means boiled till it's way thicker, cooled to room temp, then returned to the fridge)                              

- And I sometimes add melted shredded cheese or queso fresco on the eggs~

Some of the most impressive foods we ever eat are those sourced from the healthiest and cleanest natural ingredients. A steak from a grass fed cow tastes so much better than a steak from a cow raised on corn. Organic, freshly picked produce from a local source practically sings in the mouth.
